From rich and flavourful delicacies of the North to the spicy and fiery curries of the South, each dish is a burst of flavours in the mouth offering one and all a unique gastronomic experience that reflects traditions while walking down the quaint lanes and by-lanes of India. While modern food trends challenge modern tastes and palates, certain Indian culinary traditions have weathered several storms and stood the test of time.
My mother’s training in cooking techniques has kept me grounded.
